What isn't great about fried rice?
Fried rice is perfect.
Every time someone makes fried rice fairway, It's perfect for them.
Not only did I watch my mom make fried rice for me growing up, but I also remember going to restaurants, watching the chefs cook it, the walk hay with the flames, encompassing the walk, and then finally the fried rice, hitting our table, and we would all dig in.
Fried rice looks different everywhere you go, from Japan's buttery, yaki meshi, to Korea's bold kimchi pack bulkum bap, to Thailand's sweet and savory cow pad saparo.
And today, we're making my version of Chinese fried rice.
Every family has their own version.
Some people like it with beef, pork chops, shrimp, chicken, tofu, or sometimes a mix.
Growing up, my favorite was shrimp fried rice.
The shrimp just gives it a great supple texture, and bold flavors without it, feeling too heavy.
